Notification of Awarding Honorary Title

World Association of Chinese Cuisine

In order to inherit and carry forward the Chinese culinary arts and culture, improve the management level of Chinese restaurants around the world, build a environment of focusing on human resources, fostering outstanding personnel, and build more first class brands for Chinese restaurant industry in the world, the World Association of Chinese Cuisine (WACC) decided to carry out the work of appraising honorary title, including as:

International Master Chef for Chinese Cuisine
International Famous Chef for Chinese Cuisine
International Famous Restaurant for Chinese Cuisine
International Famous Entrepreneur of Chinese Cuisine Industry

 

As the global Chinese cuisine promoting organization, WACC will investigate and appraise the applicant under the principle of Justice, Fair and Open.  For those well-famed restaurants and catering enterprises with high-level management, we’ll awarding the title of International Famous Restaurant for Chinese Cuisine. For those high-rank executives in these enterprises, we’ll awarding the title of International Famous Entrepreneur of Chinese Cuisine Industry. Chinese cuisine chefs with excellent cooking skill and influence in this profession can apply International Master Chef for Chinese Cuisine or International Famous Chef for Chinese Cuisine.

WACC will issue medals/plates and certificates for the title owners. We’ll also have a grand awarding ceremony in China Chefs Festival every year. Treatment for title owners include introducing in WACC member magazine World Cuisine and our website http://www.wacc.org.cn.

Applying Procedure:
-Fill in the Applying Form, and supply the relating profiles and certificates;
-WACC will appraise the applicant according to our criteria;
-Issuing certificate and medal/plate for thhose qualified.

 

Criteria for Applying
International Master Chef for Chinese Cuisine

For Chefs outside mainland-China, if you meet the following criteria, you can apply our International Master Chef for Chinese Cuisine:
-Work in Chinese-style restaurant & catering business for more than 20 years;
-With good professional ethic and fame locally;
-With excellent cooking skill and practical experience; with strong research and innovation capability, and certain influence in international Chinese cuisine.
-With strong new dish development capabilities and international influence;
-With rich kitchen management knowledge, know local regulation on sanitation, food safety and environment protections well;
-With high theory level of culinary, especially on nutrition and balance of diet, published relating papers on journals or published profession books;
-Have awarded golden medal in any international cooking competitions, or acted as judge in such competitions;
-Contributed greatly to the promotion of Chinese cuisine around the world;
-With the knowledge of guiding senior cooks , contributed greatly on training young chefs.

 

Criteria for Applying
International Famous Chef for Chinese Cuisine


For Chefs outside mainland-China, if you meet the following criteria, you can apply our International Master Chef for Chinese Cuisine:
-Work in Chinese-style restaurant & catering business for more than 15 years;
-With good professional ethic and fame locally;
-With excellent cooking skill and practical experience; with strong research and innovation capability, and certain influence in local Chinese cuisine.
-With strong new dish development capabilities and international influence;
-With rich kitchen management knowledge, know local regulation on sanitation, food safety and environment protections well;
-With high theory level of culinary, especially on nutrition and balance of diet, published relating papers on journals or published profession books;
-Have awarded medal in any international cooking competitions, or acted as judge in such competitions;
-Contributed greatly to the promotion of Chinese cuisine around the world;
-With the knowledge of guiding senior cooks , contributed greatly on training young chefs.

 

Criteria for Applying
International Famous Entrepreneur of Chinese Cuisine Industry

 

Who can apply?
For those high-rank executives who work in the business of Chinese cuisine, take a position of Board Chairman, President, CEO, etc, can apply the title of International Famous Entrepreneur of Chinese Cuisine Industry。

Requirements:

    • With high level professional ethic and social responsibility, operating business with honesty and obey the law.
    • Highly educated, with comprehensive knowledge in food service industry, published articles/books about this profession.
    • With rich practical experience in operating Chinese cuisine restaurants, and the business is with sound fame.
    • Creative, innovative, played key role in the brand building of the business.
    • Whose enterprise managed well and with distinguished enterprise culture.
    • Famous in local food service market, has been awarded by local government or guild.

     

    Criteria for Applying
    International Famous Restaurant for Chinese Cuisine

    For restaurant/cafeteria/fast food chain  outside mainland-China, you have to meet the following criteria:
    1) Qualification:

    1. With complete legal entity;
    2. Have fixed name/brand, with more than 5 years;
    3. Operate in faith and obey the law, having good fame locally among consumers;
    4. Have complete managerial regulations;
    5. With good business performance.

    2) Sanitation

    1. Elegant decoration; all materials meet local environment standards;
    2. Working section arranged properly in kitchen;
    3. The cooking of food is performed strictly according to the regulation; Keep the equipments clean;
    4. Container/package/facilities meet sanitation requirements;
    5. Cooling facility operate well and all food keep fresh.

    3) Material:
    Food Materials All meat/poultry have quarantine certificate, with freshness period;

    1. All material COULD NOT be processed by non-eating chemicals;
    2. All material must be in their guaranty period; materials with water injection, degenerative material and its products,semi-products is prohibited;
    3. All material do not have poisonous material, the pesticide remnant could not exceed local national standard;
    4. Don’t sell protective animals and plants;
    5. Don’t use food material without certificates.

    4) Service

    1. Having standard service regulations;
    2. Using courtesy language to customers;
    3. The cloth and makeup of waiters/waitress is appropriate.

    5) Quality

    1. Food are safe, healthy and clean;
    2. With welcomed characteristics;
    3. The quality of food is stable, don’t fluctuate due to season or time.

    6) Enterprise Culture

      • The employment of staffs meet the local authorities’ requirements;
      • Employees are not allowed to take their working position until passed training procedure.
      • With staffs having awarded in national or international competitions.
